Grandma's "No fail" Acorn Squash


2 large Acorn Squash, halved and seeds/pulp removed
4 tablespoons dark brown sugar
4 tablespoons butter
Nutmeg
Kosher salt
Pepper

Preheat oven to 400°

Lay all four halves, cut side up, in a large high-sided baking dish

Add ½ inch worth of water to the pan (this will keep the bottoms from burning)

LIGHTLY sprinkle each half with salt and pepper

Add 1 tablespoon each of butter and brown sugar to each half

Bake at 400° for one hour or until flesh is very tender – after first 30 minutes use a spoon to baste the squash with the melted butter/sugar liquid inside each half.

Using a micro plane or nutmeg grater grate nutmeg over each half – I like about 8 “grates”.
