Molè sauce
Ingredients:
4 Dried Pasilla chilies, stems and seeds removed
4 Dried red New Mexican chilies, stems and seeds removed
1 medium onion, minced
2 Cloves garlic, minced
2 medium tomatoes, peeled, seeded and chopped
2 tablespoons sesame seeds – toasted
1/2 cup almonds
1/2 Corn tortilla, torn into pieces
1/4 cup raisins
3 tablespoons olive oil
1 1/2 cup chicken stock
3 Tablespoons Cocoa Magic Potion* OR make your own blend with:
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 ground cumin
1 1/2 tablespoons good quality cocoa powder
Bring Chicken Stock to a boil
Pour over dried chilies and let sit 15 minutes
Remove chilies and reserve stock
Combine chilies, onion, garlic, tomatoes, and sesame seeds, almonds, tortilla, raisins and Cocoa Magic Beef Potion along with ½ cup chicken stock
Puree in batches in blender or food processor until smooth
Heat oil in skillet, add the puree and cook for 15 minutes, stirring frequently to prevent burning. Add the remaining reserved chicken stock and the chocolate, stir well
Cook over very low heat for 45 minutes, taste for seasoning, adjust as necessary and serve. The sauce will be very thick, if you like you may add additional chicken stock during cooking to thin it out, adjust seasoning as needed.
This sauce is excellent for pork, beef or chicken. For vegetarian dishes substitute vegetable stock for the chicken stock and serve the sauce over roasted vegetables, beans or rice.
