Rosemary Kissed Cantaloupe

Ingredients

1 cup sugar

1.25 cups water

1 large sprig fresh Rosemary

2 large cantaloupes – seeded, cleaned and cut into cubes – and placed in the fridge to chill

In a small sauce pan dissolved the sugar and water together over medium heat, add rosemary and turn to a low simmer. Allow the syrup to thicken and simmer until reduced by about 1/3 – Stirring occasionally – this takes up to 30 minutes. The syrup will brown slightly.

Remove from heat, strain, and pour into a jar – allow it to cool.

Starting with 3 tablespoons of syrup for two melons, drizzle the simple syrup over the melon and stir well – taste. You may add more syrup, one teaspoon at a time until desired flavor is reached. You want to taste the rosemary on the melon, but not over power the melons natural sweetness.

Cover and chill for 30 minutes before serving.

This recipe can be made one day ahead.

Remaining simple syrup can be refrigerated for up to three weeks.
